Arginine linoleate is more readily soluble in water, aqueous alcohol and other aqueous solutions than linoleic acid itself or the natural sources of the unsaturated acid. It is possess surface-active properties. When arginine linoleate was mixed with oxymyoglobin, the pigment was oxidized rapidly to metmyoglobin with some degradation of the heme moiety. Thus, the interaction of ferrous hemoproteins such as MbO2 with Arginine linoleate may participate to some extent in the color deterioration of meat during storage. Arginine linoleate is used as the component in the cosmetic materials.

At pH 6.28 the Arginine linoleate at concentrations lower than 0.88 mM (Mb:linoleate molar ratio, 1: 13) was almost ineffective. The slightly accelerated oxidation of MbO2 observed in the early stage of the reaction may be due to a trace amount of oxidation products contained in the added Arginine linoleate. With addition of Arginine linoleate at concentrations higher than 1.32 mM (Mb:linoleate molar ratio, 1: 19), the oxidation of MbO2 was markedly accelerated.
